Coconut Chicken Curry
Annabel from our tasting team loves this, she says “it’s a bit fruity and not at all spicy, but tastes really good!” That about sums it up, a creamy, mild, sweet coconut and veggie curry sauce, with free-range, hormone-free chicken breast served with low GI white rice. Annabel likes hers with some warm naan bread.
Vegetable serves per 300g: 2.
From Skye, Our Dietitian:
"We love encouraging kids to get a little more adventurous with their eating so they can enjoy a wide variety of cuisines. Our veggie packed Coconut Chicken Curry is mildly spiced and a great way to introduce kids to curry. We serve it with low GI rice to provide sustained energy for active kids. Our rice is also full of resistant starch, a type of fibre which feeds the friendly bacteria in our gut, kind of like a fertiliser. Feeding these little guys plenty of the good stuff keeps kids' guts happy which supports a strong immune system and helps reduce the risk of developing chronic diseases later in life."
