"Including a wide variety of vegetables in kids’ diets is important, as along with being high in fibre which contributes to good gut health, each one contains different essential vitamins and minerals and phytonutrients.
Red capsicum and broccoli provide vitamin C, which as well as being an antioxidant also helps to increase the absorption of non-haem (plant-based) iron, sweet potato is rich in beta-carotene which is converted to immune-boosting vitamin A, pumpkin is a good source of potassium, and the list goes on. That’s why we include as much variety in our dishes as possible, to make sure growing kids are getting all the nutrients they need. "
